This tropical creation was whipped up by Saude Mhath Bar at the Chivas Masters in 2019. Fruity pineapple and zesty lemon marry together with Fino sherry, a more savoury, bitter type of sherry that offsets the sweetness from the fruits. The hero in this exotic whisky cocktail is certainly the seaweed syrup. While seaweed is rarely used in drinks, it’s known for providing a rich, umami flavour to food – and that’s exactly what it does in this cocktail, too.

FANCY MAKING YOUR OWN SYRUP?
You can make any syrup by simmering one part sugar with one part water, alongside anything from herbs and spices to fruits and vegetables. Simply strain the mixture out before cooling for use in a range of cocktails.
